Passion for Pizza

After spending many years working in the culinary industry, Josh founded Cipolla Rossa to bring his unique blend of classic Italian Neapolitan pizza, and thin crust New York pizza, to the greater Washington, D.C. metropolitan area. It all started when Josh would get pizza nightly after working a long restaurant shift as a cook. He studied these pizzerias and learned to love the craft and has been plotting his own pizza business since!

Cipolla Rossa's pizzas are created using fresh dough made from scratch (no sugar or preservatives), with fresh local, sustainable, seasonal, bright ingredients. The pizzas are made to order and pack a huge flavor punch with the artisanal, robust wood flavor.

Josh is a culinary veteran and has over 15 years restaurant experience working for large corporations and small restaurants. What differentiates Cipolla Rossa is Josh's extensive culinary background including graduating from The Culinary Institute of America, and working in many different kitchens in New York City, Atlanta, Miami, New England, and Washington DC. Josh worked for traditional Italian restaurants and multiple pizzerias where he developed his own style of brick oven pizza. Josh has also worked for three different mobile pizza caterers and is seasoned to serve all types of occasions.

All pizzas are made to order by hand using fine organic flours and seasonal ingredients. Pizzas are cooked between 700-900 degrees Fahrenheit and are usually cooked within 3 to 5 min. Cipolla Rossa is compliant with all health code, food safety, serving requirements, and laws locally and federally.

We are baking all pizzas and appetizers fresh on-site per event and will work with you to create a menu that combines your personal vision with our culinary expertise. We are very aware of our ingredients, where they come from and how they are produced and purchase many of our ingredients from the farmers we work with at farmers markets. Our end product not only tastes better but you can feel better about supporting local farmers.

Whether it is pizza and salads or a customized menu to include delectable appetizers, we will work with you to create a delightful, enticing menu. With many years of experience behind us, our team will carefully consider your budget and work with you to design a uniquely delicious menu that is an extension of your own hospitality.
